Notes
- Add Fillings on the Griddle: Sprinkling the bananas, chocolate chips, and walnuts onto each pancake gives better control than mixing everything directly into the batter.
- Use Ripe Bananas: Ripe bananas give the sauce better flavor and help the pancake filling soften properly.
- Don’t Boil the Sauce: Once the egg yolks are added, keep the heat low. Boiling can scramble the custard.
- White Chocolate: The white chocolate adds sweetness, body, and a creamy finish to the banana sauce without making it taste like plain vanilla pudding.
- Use Prepared Toppings: Homemade Vanilla Whipped Cream and Chocolate Drizzle keep this recipe shorter and make both toppings reusable across other breakfast and dessert recipes.
- Serving Suggestions: Serve with Whipped Cinnamon Butter, Classic Buttermilk-Style Pancakes, Whole Wheat Pancakes, Maple Glazed Walnuts, or fresh berries.
