Coconut Custard Pie
One blender batter settles into a soft bottom crust and creamy custard as this pie bakes. Shredded coconut stays on top, toasting golden above the filling for a lovely contrast in every slice.

Instructions
- Preheat Oven: Preheat oven to 350°F. Grease a 9-inch deep-dish pie pan with butter and place it on a rimmed baking sheet.Butter for greasing pie pan
- Blend Filling: Add milk, sugar, Bisquick, eggs, melted butter, and vanilla to a blender. Blend on low speed for about 3 minutes until smooth and lightly foamy.2 cups milk, ¾ cup sugar, ½ cup Bisquick baking mix, 4 large eggs, ¼ cup melted butter, 1½ tsp vanilla extract
- Fill Pie Pan: Pour the mixture into the prepared pie pan and let stand for 5 minutes.
- Add Coconut: Sprinkle the shredded coconut evenly over the top without stirring.1 cup sweetened shredded coconut
- Bake: Bake on the rimmed baking sheet for 40–50 minutes. The pie is ready when the top is golden brown, the edges are set and lightly puffed, and the center moves with a slight jiggle rather than appearing liquid. A thin knife inserted near the center should come out mostly clean.
- Cool: Set the pie pan on a cooling rack and let the pie cool for at least 1 hour before slicing. Cover and refrigerate any leftovers within 2 hours.
Notes
- Coconut: Sweetened shredded coconut gives the pie its classic texture and golden toasted top. Keep it on the surface rather than stirring it into the filling.
- Pan: Use a 9-inch deep-dish pie pan set on a rimmed baking sheet. The filling puffs as it bakes, so a shallow pie plate may be too small.
- Blending: Blend on low speed for the full 3 minutes so the filling becomes smooth without unnecessarily over-aerating it.
- Baking: Begin checking at 40 minutes. The custard continues setting as it cools, so remove it while the center still has a slight, unified jiggle.
- Make Ahead: Bake the pie up to 1 day ahead. Cool completely, cover, and refrigerate until ready to serve.
- Storage: Cover and refrigerate within 2 hours. Use within 3–4 days. Freezing is not recommended because the custard may become watery or grainy after thawing.
- Serving Suggestions: Serve with whipped cream, vanilla ice cream, or a light caramel drizzle; for a dessert spread, pair it with Classic Fresh Key Lime Pie or Millionaire's Pie.
