Country Fried Seitan
Seitan cutlets take on a peppery, golden crust when dipped and shallow-fried in seasoned country flour. Spoon warm vegan country gravy over the top just before serving so the crisp coating still has some bite.

- 1 cup Seasoned Country Flour
- ¾ cup unsweetened soy milk

- 2 cups Vegan Country Gravy (warmed)

Instructions
Instructions
- Prepare the Seitan: Slice the Marinated Seitan into 4 steak-style cutlets. Pat the cutlets dry so the breading sticks.1 lb Marinated Seitan
- Set Up the Dredge: Place the Seasoned Country Flour in a shallow dish. In a second shallow dish, whisk together the soy milk and Dijon mustard.1 cup Seasoned Country Flour, ¾ cup soy milk, 1 tsp dijon
- Bread the Seitan: Dredge each seitan cutlet in the Seasoned Country Flour, dip into the soy milk mixture, then dredge again in the Seasoned Country Flour. Press the coating gently onto each cutlet.seitan cutlets, seasoned flour, soy milk mixture
- Warm the Gravy: Warm the Vegan Country Gravy in a small saucepan over low heat, stirring occasionally, until smooth and hot.2 cups Vegan Country Gravy
- Shallow-Fry the Seitan: Heat ½ inch of avocado oil in a large skillet over medium-high heat. Fry the breaded seitan for 2–3 minutes per side, until crisp and golden brown. Transfer to a wire rack.avocado oil, breaded seitan
- Plate: Spoon warm country gravy over the top.country fried seitan, warm country gravy
Notes
- Pat the Seitan Dry: Dry seitan holds the breading better and fries more evenly.
- Double Dredge: Flour, wet batter, then flour again gives the seitan a thicker country-fried crust.
- Use a Wire Rack: Resting fried seitan on a wire rack keeps the bottom from steaming and getting soggy.
- Gravy Timing: Warm the gravy before frying the seitan so everything is ready to plate while the crust is still crisp.
- Serving Suggestions: Serve with Creamy Vegan Mashed Potatoes, Vegan Herb Stuffing, Creamy Coleslaw Dressing and Slaw Mix, Spiced Cranberry Sauce, or roasted vegetables.
