Creamy Chipotle Sauce (Crema de Chipotle)

Just a little pineapple rounds the edge of chipotle's smoky heat without turning this creamy sauce fruity. The blend stays mostly smooth, with tiny pieces of onion and pineapple in each spoonful.

Notes

  • Use full-fat crema or sour cream for a smoother warm sauce. Sour cream may need a little milk to loosen it.
  • Canned chipotles and bouillon vary by brand. Taste the finished sauce before adding another pepper or more salt.
  • Keep refrigerated for up to 4 days and reheat over low heat without boiling. Freezing can make the dairy separate.
