Ingredients

  • 1½ cups Homemade Hummus
  • 4 cups Greek Garden Salad, chopped and lightly dressed
  • 4 large whole wheat tortillas
  • ½ cup sheep’s milk feta, crumbled
  • lemon (wedges, for serving)

Instructions

Instructions

  1. Prepare the Greek Salad: Chop the Greek Garden Salad slightly smaller than you would for a plated salad so it fits easily inside the wrap. If the salad is heavily dressed, drain off any excess dressing before assembling.4 cups Greek Garden Salad
  2. Warm the Tortillas: Warm the whole wheat tortillas in a dry skillet, on a griddle, or wrapped in foil in the oven until soft and flexible.4 whole wheat tortillas
  3. Spread the Hummus: Lay the tortillas flat and spread about ⅓ cup Homemade Hummus across the center of each tortilla, leaving room around the edges for folding.1½ cups Homemade Hummus
  4. Fill the Wraps: Divide the chopped Greek salad over the hummus. Sprinkle each wrap with sheep’s milk feta and a little black pepper if desired.prepared Greek salad, ½ cup sheep’s milk feta, black pepper
  5. Roll the Wraps: Fold in the sides of each tortilla, then roll tightly from the bottom into a wrap.prepared wraps

Notes

  • Don’t Overdress the Salad: Too much dressing will make the tortilla soggy. The salad should be lightly coated, not wet.
  • Chop It Smaller: A wrap needs smaller pieces than a plated salad so every bite gets hummus, vegetables, olives, feta, and dressing.
  • Warm the Tortilla: Whole wheat tortillas roll much better when warm and flexible.
  • Feta: Sheep’s milk feta gives the wrap its best salty, creamy bite.
  • Vegan Option: Omit the feta or use vegan feta-style cheese.
