Mexican Adobo Chicken with Potatoes (Pollo Adobado con Papas)
The chile adobo stains this chicken a deep brick red as it slowly braises. Potatoes soak up the spiced sauce, which turns glossy during the final uncovered minutes.

Notes
- Taste the chile-soaking water before using it. If it's bitter, use fresh water or broth instead.
- Make the adobo up to 3 days ahead. Reserve a clean portion for cooking before any sauce touches raw chicken, and discard the used marinade.
- Refrigerate leftovers for 3–4 days. Reheat gently with a little broth if the sauce has tightened.
- Chicken and sauce freeze for up to 3 months. Potatoes soften after thawing, so keep them out of freezer portions when texture matters.
