Pineapple Coupe
Orgeat gives a soft almond finish to this bright, pineapple-led coupe. Shake it very cold and serve straight up, or pour it over crushed ice on a hotter day.

- 1 oz orange juice — freshly squeezed
- 1 oz lemon juice — freshly squeezed
- ⅓ oz orgeat syrup
- ⅓ oz orange curaçao
- ⅓ oz rock candy syrup
- Ice — for shaking and serving
Optional
- 1 ½ oz light rum (optional)

- pineapple — wedge
- cocktail cherry
- citrus wheel — dehydrated
Instructions
- Fill the Shaker: Fill a cocktail shaker about halfway with ice. Add pineapple juice, orange juice, lemon juice, orgeat syrup, orange curaçao, rock candy syrup, and light rum if using.1 oz pineapple juice, 1 oz orange juice, 1 oz lemon juice, ⅓ oz orgeat syrup, ⅓ oz orange curaçao, ⅓ oz rock candy syrup, 1½ oz light rum (optional), ice
- Shake the Cocktail: Seal the shaker and shake vigorously for 15–20 seconds, until the outside feels very cold and becomes lightly frosted.
- Serve: Strain the cocktail into a chilled coupe glass. For the over-ice variation, fill a rocks glass with fresh crushed ice and strain the cocktail over the top.
- Garnish: Add one orange peel, pineapple wedge, cocktail cherry, or dehydrated citrus wheel if desired. Serve immediately.
Notes
- Juices: Fresh orange and lemon juice give the cocktail its brightest flavor. Use chilled, unsweetened pineapple juice so the sweetness remains controlled.
- Orgeat: Orgeat softens the citrus and adds subtle almond richness. It is commonly almond-based, so check the label before serving anyone with a tree-nut allergy.
- Rock Candy Syrup: Sweetness varies between brands of rock candy syrup. Use the same product during recipe testing so the results remain consistent.
- Rum: Light rum remains optional in this draft. Add it for a fuller and stronger tropical cocktail. Even without the rum, the orange curaçao means the drink still contains alcohol.
- Serving and Make Ahead: Serve straight up in a chilled coupe glass or over fresh crushed ice in a rocks glass. The juices, orgeat, orange curaçao, and rock candy syrup may be combined and refrigerated for several hours; shake with ice immediately before serving.
- Serving Suggestions: Serve with Guacamole or Tex-Mex Dip, or offer the Mai Tai as a stronger companion cocktail.
