Roasted Beet Focaccia Sandwich

Warm focaccia holds the sweet earthiness of roasted beets without losing its soft chew. A swipe of lemon caper aioli cuts through the melted Swiss and grilled zucchini.

Close the sandwiches with the melted Swiss focaccia tops.½ cup Lemon Caper Aioli, roasted beets, grilled zucchini, 1 cup sprouts, ½ cup red onion
  6. Serve: Slice if needed and serve immediately.

Notes

  • Best Bread: Use a fresh bakery focaccia that is soft enough to bite through but sturdy enough to hold the vegetables and aioli.
  • Roast the Beets Ahead: The beets can be roasted, peeled, and sliced a day ahead. Keep them refrigerated until ready to build the sandwiches.
  • Don’t Overcook the Zucchini: The zucchini should be tender with grill marks, not mushy.
  • Red Onion: Slice the onion very thin so it adds sharpness without overpowering the sandwich.
  • Vegan Option: Use vegan Swiss-style cheese and make sure the focaccia is vegan.
