Savory Vegan French Dip

The seitan is shaved thin and seared hard enough to make crisp edges before it goes into the toasted baguette. A little avocado spread keeps the sandwich rich, while warm vegetarian jus makes every dip the best bite.

Ingredients

  • 1 pound Marinated Seitan (shaved or thinly sliced)
  • 2 cups Vegetarian Au Jus (warmed)
  • 1 large baguette, cut into 4 sandwich portions
  • 6 ounces Swiss cheese, sliced

Avocado Spread

  • 1 large ripe avocado
  • 1 tablespoon lemon juice
  • ¼ teaspoon kosher salt
  • 1 tablespoon water (as needed)

Vegetables

  • 1 tablespoon avocado oil
  • ½ pound button mushrooms (sliced)
  • 1 green bell pepper, (julienned)
  • 1 red bell pepper (julienned)
  • 1 yellow onion (thinly sliced)
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper (coarse, freshly ground)

Instructions

Instructions

  1. Prepare the Avocado Spread: Add the avocado, lemon juice, kosher salt, and 1 tablespoon water to a small food processor or blender. Blend until very smooth, adding just enough water to make it spreadable. Set aside.1 avocado, 1 tbsp lemon juice, ¼ tsp kosher salt, 1 tbsp water
  2. Sauté the Vegetables: Heat the avocado oil in a large skillet over medium-high heat. Add the mushrooms, bell peppers, onion, kosher salt, and black pepper. Cook for 8–10 minutes until the vegetables are tender and lightly browned.1 tbsp avocado oil, 8 oz mushrooms, 1 green bell pepper, 1 red bell pepper, 1 yellow onion, ½ tsp kosher salt, ¼ tsp black pepper
  3. Brown the Seitan: Push the vegetables to one side of the skillet or transfer them to a plate. Add the shaved Marinated Seitan to the skillet and cook for 4–5 minutes until hot and browned around the edges.1 lb Marinated Seitan
  4. Combine the Filling: Toss the seitan with the sautéed mushrooms, peppers, and onions. Taste and adjust seasoning if needed.prepared seitan, prepared vegetables
  5. Melt the Cheese: Divide the filling into 4 portions in the skillet. Lay Swiss cheese over each portion, reduce the heat to low, and cover for 1–2 minutes until the cheese melts.6 oz Swiss cheese
  6. Toast the Baguette: Split the baguette portions and toast them lightly until warm and crisp on the cut sides.1 baguette
  7. Serve with Au Jus: Ladle the warm Vegan Au Jus into small bowls and serve alongside the grinders for dipping.2 cups Vegan Au Jus

Notes

  • Shave the Seitan Thin: Thin slices give the sandwich a better texture and help the seitan brown quickly.
  • Keep the Avocado Smooth: This is not guacamole. Blend it completely smooth and use it lightly so it supports the sandwich without taking over.
  • Best Bread: Use a baguette that is crisp outside but not too tough. A softer French baguette or Italian-style baguette works better than a hard artisan loaf.
  • Serve the Au Jus on the Side: Don’t pour the au jus onto the sandwich before serving or the bread will get soggy too fast.
  • Vegan Option: Use vegan Swiss-style cheese and make sure the baguette is vegan.
