Savory Vegan Reuben

A Reuben needs heat, tang, and a good griddle crust, and this mushroom version delivers all three. Griddling the rye keeps the bread crisp around the smoky filling and sauerkraut.

Ingredients

  • 3 cups Reuben Mushrooms
  • 1 cup Homemade Red Cabbage Sauerkraut (drained well)
  • ½ cup Vegan 1000 Isle Dressing
  • 8 slices rye bread
  • 6 ounces swiss cheese (thinly sliced)
  • 2 tablespoons vegan butter or avocado oil (for griddling)

Optional

  • dill pickles (spears, for serving)

Instructions

Instructions

  1. Warm the Mushrooms: Heat a large skillet over medium-high heat. Add the Reuben Mushrooms and cook for 3–5 minutes until hot and lightly browned around the edges.3 cups Reuben Mushrooms
  2. Drain the Sauerkraut: Drain the Homemade Red Cabbage Sauerkraut well and gently squeeze out excess liquid so it does not make the bread soggy.1 cup Homemade Red Cabbage Sauerkraut
  3. Build the Sandwiches: Spread Vegan 1000 Isle Dressing on one side of each slice of rye bread. Layer Swiss cheese, warm Reuben Mushrooms, sauerkraut, and another layer of Swiss if desired. Close the sandwiches.8 slices rye bread, ½ cup Vegan 1000 Isle Dressing, 6 oz swiss cheese, warm mushrooms, drained sauerkraut
  4. Griddle the Sandwiches: Heat a large skillet or griddle over medium heat. Add vegan butter or avocado oil. Cook the sandwiches for 3–4 minutes per side until the rye is golden and crisp and the Swiss is melted.2 tbsp vegan butter or avocado oil, prepared sandwiches

Notes

  • Drain the Sauerkraut: Too much liquid is the fastest way to ruin the texture of a Reuben. Drain it well before building the sandwich.
  • Cook It Like Grilled Cheese: Low to medium heat gives the cheese time to melt before the rye gets too dark.
  • Best Bread: Use seeded rye, marble rye, or Jewish rye. The bread should be sturdy enough to hold the sauerkraut and mushrooms without falling apart.
  • Vegan Option: Use vegan Swiss-style cheese and make sure the rye bread is vegan.
  • Serving Suggestions: Serve with Vegetarian Au Jus, Crispy Tortilla Strips, Creamy Coleslaw Dressing and Slaw Mix, or a simple pickle spear.
