Southwest Summer Salad

The zucchini and corn come off the grill smoky and warm, a good match for the cold bed of greens. Chipotle ranch and the crackle of chili-lime nuts turn this into a salad with real staying power.

Notes

  • Three Sisters: Corn, beans, and squash are the foundation of the classic Three Sisters combination. Here, zucchini stands in for summer squash.
  • Don’t Overdress: Start with less chipotle ranch and add more only if needed. The greens should be coated, not soaked.
  • Zucchini: Let the zucchini cool for a few minutes before adding it to the greens so it doesn’t wilt the salad.
  • Serving Suggestions: Serve as an entrée salad or alongside Vegetarian Green Chili, Creamy Pinto Beans, Pico de Gallo, or Crispy Tortilla Strips.
