  • ¼ teaspoon black pepper (coarse, freshly ground)

Instructions

Instructions

  1. Marinate the Seitan: Add the sliced seitan to a bowl and toss with the Fajita Marinade until evenly coated. Let sit for 10–15 minutes while you prepare the vegetables.1 lb seitan, ½ cup Fajita Marinade
  2. Cook the Peppers and Onions: Heat 1 tablespoon avocado oil in a large skillet, grill pan, or griddle over medium-high heat. Add the peppers, onion, kosher salt, and black pepper. Cook for 6–8 minutes, tossing occasionally, until tender and lightly charred. Transfer to a plate.1 red bell pepper, 1 green bell pepper, 1 yellow bell pepper, 1 onion, 1 tbsp avocado oil, ½ tsp kosher salt, ¼ tsp black pepper
  3. Brown the Seitan: Add the remaining avocado oil to the skillet. Add the marinated seitan and cook for 4–5 minutes, tossing occasionally, until hot and browned around the edges.1 tbsp avocado oil, marinated seitan
  4. Combine the Filling: Return the peppers and onions to the skillet with the seitan. Toss everything together and cook for 1–2 minutes until hot.seitan, peppers, onions
  5. Warm the Tortillas: Warm the whole wheat tortillas in a dry skillet, on a griddle, or wrapped in foil in the oven until soft and flexible.8 whole wheat tortillas

Notes

  • Cook Hot: Fajitas should taste grilled, not steamed. Use medium-high heat and avoid overcrowding the pan.
  • Slice Evenly: Thin, even strips of peppers, onions, and seitan cook quickly and fit better inside tortillas.
  • Marinade Timing: The seitan only needs a short marinade because it is already cooked and absorbs flavor quickly.
  • Warm the Tortillas: Whole wheat tortillas roll and fold much better when warm.
  • Serving Suggestions: Serve with brown rice, Creamy Pinto Beans, Vegetarian Green Chili, Pico de Gallo, shredded lettuce, avocado, lime wedges, or Vegan Sour Cream.
