Vegan Au Jus
Caramelizing the vegetables gives this vegan au jus a surprisingly deep savoriness. Red wine and a wisp of smoke round the broth into a warm dip for a plant-based sandwich.

- Serve: Serve hot or cool completely before refrigerating or freezing.
Notes
- Don't Skip the Browning: Caramelizing the vegetables before adding the liquid creates a noticeably richer au jus.
- Wine: Choose a dry red wine that you would enjoy drinking. Avoid sweet wines.
- Storage: Refrigerate for up to 5 days or freeze for up to 3 months.
- Serving Suggestions: Excellent with Vegetarian French Dip sandwiches, Creamy Vegan Mashed Potatoes, Vegetarian Country Gravy, or Marinated Tempeh Scallopini.
