Vegan Garlic Herb Compound Butter
Roasted garlic makes this butter mellow, then a little fresh garlic wakes it up again. Cut a cold slice from the herb-flecked log and let it melt over something hot.

- Cool and Mash: Let the roasted garlic cool completely. Mash the cloves into a smooth paste with a fork. Measure 1 tablespoon for the butter.1 tbsp roasted garlic paste

Notes
- Compound Butter Texture: This is designed as a firm, sliceable compound butter rather than a whipped spread.
- Use Stick-Style Plant Butter: Stick-style plant butter has the firmness needed to hold herbs and garlic in a clean log. Tub spreads are generally too soft.
- Two Garlic Flavors: Roasted garlic gives sweetness and depth, while one small fresh clove keeps the butter bright. Omit the fresh clove for a milder flavor.
- Cool the Garlic Completely: Warm roasted garlic will melt the plant butter and prevent the log from setting evenly.
- Control the Moisture: Use only 1 tablespoon of thick roasted garlic paste. Excess roasted garlic or oil can soften the butter.
- Dry the Herbs: Water clinging to washed herbs can create droplets in the log and shorten storage life.
- Lemon Zest: Lemon zest adds freshness without weakening the butter. Use zest instead of lemon juice for the most stable texture.
- Rosemary: Keep the rosemary restrained. Too much can overpower the parsley, chives, and roasted garlic.
- Presentation: Chill until very firm and slice with a sharp knife warmed briefly under hot water and wiped completely dry.
- Using as a Sauce: Melt gently over low heat and spoon over vegetables, tofu, seitan, mushrooms, potatoes, rice, or pasta. Avoid boiling aggressively.
- Storage: Store refrigerated in an airtight container for up to 1 week, or freeze the tightly wrapped log for up to 3 months.
- Serving Suggestions: Serve with tofu steaks, grilled seitan, roasted mushrooms, baked potatoes, mashed potatoes, corn on the cob, asparagus, broccoli, carrots, pasta, rice, garlic bread, sourdough, or warm dinner rolls.
