Vegan Green Chili
The roast on the Hatch chiles gives this green chili its deep flavor, while tomatillos keep the pot bright. It grows rounder after a night in the refrigerator, making it worth cooking ahead.

- Serve: Ladle into bowls or spoon over burritos, fries, baked potatoes, enchiladas, or breakfast dishes.
Notes
- Garbanzo Flour: Cooking the garbanzo flour before adding the liquid removes any raw flavor while naturally thickening the chili.
- Roasted Green Chiles: Hatch chiles give the most authentic flavor, but Anaheim chiles work well too.
- Make Ahead: Like most chilis and stews, the flavor improves after resting overnight.
- Serving Suggestions: Excellent over Creamy Vegan Mashed Potatoes, Scrambled Tofu, Vegan Chorizo, burritos, enchiladas, fries, or baked potatoes.
