Vegetarian Puttanesca

Puttanesca needs a briny snap, and a little arame supplies the sea-salt depth anchovies usually bring. The sauce grips linguine in a bold, tomato-rich tangle rather than a heavy blanket.

  3. Start the Sauce: Heat the olive oil in a large skillet over medium heat. Add the garlic and cook for 30–60 seconds until fragrant. Add the Roma tomatoes, olives, capers, arame, and red pepper flakes. Sauté for 3–4 minutes until the tomatoes begin to soften.2 tbsp olive oil, 4 cloves garlic, 3 Roma tomatoes, ¾ cup olives, 3 tbsp capers, arame, ¼ tsp red pepper flakes

  6. Toss the Linguine: Add the cooked linguine, Parmesan, and a splash of reserved pasta water to the skillet. Toss until the pasta is glossy and evenly coated, adding more pasta water as needed.cooked linguine, ½ cup parmesan, reserved pasta water

Notes

  • Arame: Arame gives this vegetarian puttanesca a subtle ocean-like savoriness that stands in for anchovy without making the sauce taste like seaweed.
  • Reduce the Wine: Let the wine simmer for a few minutes before adding the marinara so the sauce tastes rounded instead of sharp.
  • Use Pasta Water: The reserved pasta water helps the marinara, Parmesan, and olive oil cling to the linguine.
  • Salt Carefully: Olives, capers, Parmesan, and marinara all bring salt, so taste before adding more.
  • Typical Garnish: Fresh parsley, Parmesan, cracked black pepper, and a small drizzle of extra virgin olive oil make this pasta feel finished.
  • Serving Suggestions: Serve with Vegan Caesar Salad, Greek Garden Salad, Roasted Eggplant Bruschetta Toasts, or Fresh Basil Pesto.
