Whipped Ginger Butter
Three forms of ginger make this whipped butter warm at first, then bright, with little sweet bits tucked through. A scoop slowly softens over sweet potato pancakes.

Notes
- Use Softened Butter: The butter should be soft enough to whip, but not melted. Melted butter can separate and will not give the same fluffy texture.
- Fresh Ginger Juice: Using the juice gives the butter bright ginger flavor without fibrous pieces.
- Crystallized Ginger: Mince it very finely so it blends into the butter instead of creating large chewy pieces.
- Orange Zest: Optional, but it works especially well with sweet potato pancakes, caramel, pecans, biscuits, and roasted squash.
- Longer Storage Option: For a cleaner pantry-style butter, omit the fresh ginger juice and increase the ground ginger to 1 teaspoon.
- Storage: Store refrigerated in an airtight container for up to 1 week, or freeze for up to 3 months.
- Serving Suggestions: Serve with Sweet Potato Pancakes, Homemade Salted Caramel Sauce, Classic Buttermilk-Style Pancakes, biscuits, waffles, cornbread, roasted sweet potatoes, or grilled pineapple.
