Potatoes drink in the creamy mustard dressing as this salad chills. Each scoop has the soft and crisp textures of the familiar picnic classic.
This classic potato salad is creamy, tangy, and filled with familiar flavors that never seem to go out of style! Tender potatoes, eggs, celery, pickles, and mustard come together in a rich dressing that becomes even better after a few hours in the refrigerator. It's a timeless side dish that's equally at home at summer cookouts, family reunions, holiday gatherings, and weekend suppers.

I don't think there's ever been a family picnic without a bowl of potato salad somewhere on the table. I usually make it the day before because it always tastes better after the potatoes have had time to soak up all the flavor. Right before serving, I give it a stir and sometimes add a little extra mayonnaise if it looks like the potatoes have gotten hungry overnight.

Simmer the whole potatoes until tender, then cool, peel, and cut them into bite-sized chunks.

Hard boil the eggs, chop eight for the salad, and reserve two for the garnish.

Fold the cooled potatoes, chopped eggs, celery, onion, and pickles into the mayonnaise and mustard dressing.

Refrigerate the salad for at least two hours, or preferably overnight, so the flavors blend together.
Top the cold salad with the reserved eggs and a light sprinkle of paprika.
