Crockpot Kraut Stew

Smoky Polish sausage and potatoes simmer with sauerkraut in a creamy celery sauce. A little brown sugar softens the tang, giving this slow-cooked stew its cozy sweet-savory balance.

This Crockpot Kraut Stew turns a short list of pantry ingredients into a hearty all-day supper. Brown sugar softens the sauerkraut’s sharp edge while the smoky sausage, onion, potatoes, and cream of celery soup cook into a savory, spoonable stew.

Granny’s Kitchen Notes

From Betty Lou Gardner

I leave the potato peels on because they help the potatoes hold together and save extra work besides. This stew tastes even better the next day after the sausage and kraut have had more time to settle together.

How to Make Crockpot Kraut Stew

◆
Sauerkraut, condensed cream of celery soup, packed brown sugar, onion, russet potatoes, Polish sausage, and optional Monterey Jack cheese arranged around a vintage slow cooker.
01

Prepare the Ingredients

Lightly rinse and drain the sauerkraut, scrub and cut the potatoes, chop the onion, and cut the sausage into chunks.

02

Fill the Crockpot

Stir the condensed soup and brown sugar together, then add the sauerkraut, onion, potatoes, and sausage.

03

Cook Low and Slow

Cover and cook until the potatoes are fork-tender, the sausage is steaming hot, and the flavors have blended together.

04

Adjust and Serve

Stir once near the end, add a little water only if the stew looks dry, and serve hot with optional Monterey Jack cheese.
