Three-layer tres leches cake frosted with whipped cream, cinnamon and strawberries, with a slice revealing the moist sponge layers.

Tres Leches Cake (Pastel de Tres Leches)

Three thin vanilla sponge layers drink up a blend of condensed milk, evaporated milk, and cream one layer at a time. After a long chill beneath whipped cream, the cake slices cleanly while each bite stays lush and fully soaked.

Butter Club Notes

Tres leches makes a second slice seem like a perfectly reasonable idea. The sponge stays light, the milk soak makes it cold and soft, and a little whipped cream finishes the whole thing without weighing it down. I like thin layers because you can give each one the milk it needs and see when it has had enough. The refrigerator does the last part of the work. Cut it cold, pour some coffee, and don't expect much cake to survive the evening.

Egg whites whipped with sugar to glossy medium-stiff peaks for the tres leches sponge batter.
03

Whipped egg whites being gently folded into pale vanilla sponge batter with a flexible spatula.
04

Fold the Batter:

Lighten the yolk mixture with part of the whites, then gently fold in the remainder without deflating the foam.

A cooled round sponge layer being leveled with a horizontal serrated knife.
06

Cool and Trim:

Chill the cooled layers briefly, then level the tops and remove the dark outer edges to expose the absorbent crumb.

Sweetened condensed milk, evaporated milk, heavy cream, vanilla, and salt whisked into the three-milk soak.
07

Prepare the Three-Milk Soak:

Whisk together sweetened condensed milk, evaporated milk, heavy cream, vanilla, and salt.

08

Soak and Stack:

Place each layer inside a cake ring, pierce it, and slowly apply one measured cup of milk before adding the next layer.

The covered milk-soaked cake stack chilling in its cake ring in the refrigerator.
09

Chill the Stack:

Refrigerate the assembled cake inside the ring until the milk has distributed and the layers feel stable.

Tempered gelatin mixture being poured into softly whipped cream for the stabilized frosting.
10

Stabilize the Whipped Cream:

Bloom and dissolve a small amount of gelatin, then incorporate it into cold whipped cream.

Stabilized whipped cream being spread over the top and sides of the layered tres leches cake.
11

Frost and Chill:

Cover the cake with the whipped cream and refrigerate until the coating firms and the soaked sponge settles.

12

Finish and Serve:

Dust lightly with cinnamon and add fresh strawberries immediately before slicing.
