Slices of Betty’s Sauerbraten covered with sour cream onion gravy and served with buttered egg noodles and red cabbage on a blue floral plate.

Betty’s Sauerbraten

Time does most of the work in Betty's sauerbraten, from the tangy marinade to the slow braise. Crushed gingersnaps give the onion gravy its velvety body and quiet sweetness.

This Sauerbraten is rich, tender, and deeply flavorful, with a roast marinated for four days and slowly braised until fork-tender. Vinegar, whole spices, onions, and sour cream create Betty’s distinctive tangy, velvety gravy, especially good over buttered noodles, spaetzle, or alongside red cabbage.

Granny’s Kitchen Notes

From Betty Lou Gardner

Turn the roast every time I think about it while it’s marinating. The onions from the marinade belong in the gravy. Gingersnaps go in if I have them. Noodles need plenty of room on the plate because the gravy is the whole point.

05

Finish the Sour Cream Gravy

Rest the roast while the braising liquid is strained, lightly reduced if needed, and gently finished with tempered sour cream.

06

Serve with Noodles or Red Cabbage

Slice the roast across the grain or pull it into tender chunks, then spoon plenty of onion gravy over the top.
