Prepare the Marinade
Mix the olive oil with thyme, rosemary, oregano, garlic, dried bay leaves, kosher salt, and black pepper.

A long herb marinade perfumes the chicken before it meets the grill. Evenly thick breasts cook to juicy slices with fragrant, lightly charred edges.
These Herbed Chicken Breasts with Olive Oil are simple, practical, and deeply aromatic. Dried rosemary, thyme, oregano, garlic, and bay leaves season the chicken during a long refrigerated soak, while controlled grill heat and a thermometer help the breasts brown without drying out. Serve them warm for a family supper or chilled the next day in sandwiches, wraps, and salads.

I give these the overnight soak if there’s time. I take the chicken out while the grill heats, but I don’t leave it sitting out any longer than necessary. I keep the thicker pieces on the cooler side and use a thermometer instead of guessing. They’re good cold the next day if any are left.

Mix the olive oil with thyme, rosemary, oregano, garlic, dried bay leaves, kosher salt, and black pepper.

Pat the chicken dry, even out any very thick ends, coat it thoroughly, and refrigerate for at least 4 hours or preferably overnight.
Heat an outdoor grill to medium, approximately 375–400°F, and create a slightly cooler area for thicker pieces.

Let the excess marinade drip away, remove the bay leaves and large garlic clumps, and grill, covered, until lightly browned and the thickest part of each breast reaches 165°F.

Let the chicken rest for 5 minutes before slicing or serving.
Serve warm for supper or chill the leftovers for sandwiches, wraps, and salads.
