Sliced salmon loaf on a vintage platter with peas, mashed potatoes, lemon wedges, and fresh dill.

Salmon Loaf

The salmon mixture looks almost too soft when it goes into the loaf pan, then bakes into a delicate slice. Cold leftovers crisp beautifully in butter the next day.

This Salmon Loaf is tender, savory, and wonderfully comforting with flaky salmon, buttery breadcrumbs, and a soft, delicate texture that holds together without feeling heavy! Simple pantry ingredients come together in a classic family-style supper that pairs beautifully with mashed potatoes, peas, and a squeeze of fresh lemon.

Granny’s Kitchen Notes

From Betty Lou Gardner

I want the mixture to look a little too soft before it goes into the oven. I use the old glass loaf pan for the full recipe. Cold slices fry up beautifully in a little butter the next day. Worth making extra for that alone.

How to Make Salmon Loaf

◆
Cooked flaked salmon, fresh breadcrumbs, very finely minced onion, melted butter, salt, and black pepper in a white mixing bowl.
01

Mix the Salmon Base

Gently combine the salmon, fresh breadcrumbs, onion, butter, salt, and black pepper.

03

04

Bake Until Set

Bake until lightly browned, firm in the center, and 160°F, about 35 to 45 minutes.

05

Rest and Serve

Let the loaf rest for 5 minutes before slicing and serving warm.
