Roast the Poblanos:
Char the peppers until blistered, then cover and steam them so the skins loosen.

Brown the squash in batches first, and these calabacitas keep their tender edges instead of going watery. Sweet corn and roasted poblano make the skillet colorful enough to bring straight to the table.
Calabacitas should still look alive when it reaches the table: browned squash, sweet corn, softened tomato, and strips of roasted poblano. I give the vegetables their own time in the skillet so the squash keeps its shape and the tomato makes a light sauce around everything. Epazote or cilantro brings a fresh finish. It's good beside chicken or fish, and just as welcome tucked into a tortilla with a little queso fresco. Vegetables can carry their own dinner.

Char the peppers until blistered, then cover and steam them so the skins loosen.

Peel and slice the poblanos, dice the squash evenly, and prepare the remaining vegetables.

Brown the squash in two uncrowded batches so it develops color without steaming.

Soften the white onion and optional serrano, then briefly cook the garlic.

Let the corn cook directly against the hot skillet until lightly blistered in places.

Add the Roma tomatoes and cook until their juices lightly thicken around the vegetables.

Fold in the roasted poblano strips and browned squash and cook only until the squash is tender.
Remove the skillet from the heat, stir in epazote or cilantro, and adjust the seasoning.
