Roast the Jalapeños:
Roast the peppers until lightly charred and tender.

Roasting tames the jalapeños and adds a little smokiness before this green sauce is puréed silky smooth. It has a tangy tomatillo bite and enough warmth to wake up a taco without drowning it.
This is one of those sauces that always seems to disappear faster than I expect. It has just enough heat to keep things interesting without taking over the whole meal. Roasting the jalapeños first makes a huge difference because it softens their bite and adds a little smoky depth that fresh peppers just can't match. I usually keep a squeeze bottle of this in the refrigerator because it's the kind of sauce you end up putting on everything.

Roast the peppers until lightly charred and tender.

Sauté the onions and bell peppers until softened.

Add the remaining ingredients and cook until the vegetables are tender.

Puree the sauce until silky.
Refrigerate until ready to use.
