Cook the Quinoa:
Simmer the quinoa until tender, then cool completely.

Toasted corn and black beans give this lime-dressed quinoa salad enough substance for lunch. A few hours in the refrigerator let the spices mellow and the bright dressing work through the grains.
This is one of those recipes that actually gets better after it spends a few hours in the refrigerator. The lime works its way into the quinoa, the spices mellow out, and everything starts tasting like it belongs together. I usually make a batch at the beginning of the week because it's just as good straight from the refrigerator as it is at room temperature. Throw it next to grilled tofu or eat it on its own—it never seems to last very long.

Sauté the corn with the spices until lightly toasted.

Combine the quinoa with the vegetables and beans.

Toss everything together and chill before serving.
