Combine the Base:
Blend the vinegar, lemon juice, herbs, pepper, and sugar.

A slow stream of olive oil turns the tangy herb mixture into a smooth vinaigrette. Its bright lemon edge makes a bowl of greens feel ready for the table.
Greek dressing is one of those recipes that's always in my refrigerator because it never seems to run out of uses. Of course it's great on a Greek salad, but it's just as good tossed with roasted vegetables, pasta salads, chickpeas, or used as a quick marinade. I like that it's light enough to let fresh ingredients shine instead of covering them up. The fresh lemon juice gives it a brightness that bottled dressings almost never have.

Blend the vinegar, lemon juice, herbs, pepper, and sugar.

Slowly drizzle in the olive oil while blending.
Taste and adjust the seasoning if needed.
Refrigerate until ready to use.
