Cut the Bread:
Slice the focaccia into bite-sized cubes.

Focaccia cubes toast golden in seasoned vegan butter but keep a little chew in the middle. Scatter them over a salad for a crouton with real bread texture.
Store-bought croutons have never really done much for me. They're usually hard enough to chip a tooth and don't taste like much besides stale bread. These are completely different. The focaccia stays light in the center, the edges get perfectly crisp, and the garlic, onion, and herbs make every bite worth stealing straight off the sheet pan. I almost always make extra because they disappear long before the salad is ready.

Melt the vegan butter and whisk in the herbs and spices.

Toss the bread cubes until evenly coated.

Bake until golden brown and crunchy.
Allow the croutons to cool completely before storing.
