Prepare the Aromatics:
Roughly chop the onion and ginger.

White miso makes the tahini taste surprisingly rich, then ginger brings a clean, fresh finish. A splash of water turns the blend silky enough to drizzle rather than dollop.
This is one of those dressings that somehow tastes richer than the ingredient list would suggest. The miso brings plenty of savory flavor, the tahini gives it body, and the ginger keeps everything feeling fresh instead of heavy. I use it on salads all the time, but it's just as good drizzled over roasted vegetables or grain bowls. If you've never cooked with miso before, this is a pretty good place to start.

Roughly chop the onion and ginger.

Blend the onion, garlic, and ginger until smooth.

Add the remaining ingredients and blend until creamy.
Refrigerate before serving.
