Season the Nuts:
Toss the peanuts and pumpkin seeds with the oil, lime, and seasonings.

A squeeze of fresh lime cuts through the salt and chili on these roasted nuts and seeds. They are just as easy to eat by the handful as they are to scatter over a salad.
I always end up making more of these than I think I'll need, and somehow they're still gone by the end of the day. They're salty, crunchy, a little spicy, and the fresh lime keeps everything tasting bright instead of heavy. They're great on salads, but I've also caught myself eating handful after handful straight from the sheet pan while they're still warm.

Toss the peanuts and pumpkin seeds with the oil, lime, and seasonings.

Bake until lightly toasted.
Allow the coating to dry as the mixture cools.
Enjoy immediately or store in an airtight container.
