This Potato Kugla is a sweet-savory, old-world casserole with a deeply browned crust and a soft center threaded with bacon and onion. Betty’s version uses sweetened condensed milk, giving the potatoes distinctive richness while the slow two-temperature bake builds crisp, caramelized edges.

I like the crispy browned edges best when this comes out of the oven. Some people call it Kugel and some call it Kugla, and everybody seems convinced their family has the right name for it.

Shred the potatoes just before mixing so they stay pale and keep the starch that helps hold the casserole together.

Combine the potatoes with the bacon, onion, rendered drippings, sweetened condensed milk, salt, and pepper.
Bake at 350°F, then lower the oven to 300°F until the top and edges are crisp and the center is tender.
Let the Kugla rest for 10 minutes before serving with optional sour cream and parsley.
