The scooped zucchini pulp goes back into the sausage filling, so none of the garden flavor is lost. Once baked, the tender shells hold a browned, savory center that works as supper on its own.

Granny’s Kitchen Notes

From Betty Lou Gardner

I never throw away the zucchini pulp because it belongs right back in the filling where all that flavor came from in the first place. Sometimes I add a little extra cheese over the top if I'm feeling generous, and it always browns up nicely in the oven. This is one of those suppers that makes the whole kitchen smell good long before it's time to sit down and eat.

How to Make Stuffed Zucchini

Eight hollowed zucchini halves with the reserved pulp after the whole zucchini are simmered until barely tender.
01

Prepare the Zucchini Shells

Simmer the whole zucchini until barely tender, then cool, cut them in half, and scoop out the centers while leaving sturdy shells.

Cooked sausage, onion, and zucchini pulp cooling before cracker crumbs, egg, Parmesan, and seasonings are mixed in.
02

Cook the Sausage Filling

Brown the sausage and onion, then cook the reserved zucchini pulp until its excess moisture evaporates. Cool briefly before mixing in the cracker crumbs, egg, Parmesan, and seasonings.
