Classic Fresh Key Lime Pie

Fresh key lime juice gives this cool pie a clean tartness that lingers after the sweetness. Whipped cream softens the citrus edge above a buttery crumb crust.

This Classic Fresh Key Lime Pie is cool, creamy, and bright with fresh citrus flavor balanced by sweet whipped cream and a buttery graham cracker crust. Smooth and refreshing with just the right tart finish, it’s the kind of old-fashioned chilled pie that feels especially perfect for spring gatherings, summer dinners, and holiday dessert tables.

Granny’s Kitchen Notes

From Betty Lou Gardner

Fresh lime juice makes this pie taste brighter and cleaner than the bottled kind, so I use it whenever I can. The middle may still look a little softer than people expect when it comes out of the oven, but after a long chill it settles into just the right texture.

How to Make Classic Fresh Key Lime Pie

◆
A hand presses graham cracker crumbs evenly into a ceramic pie dish with a flat-bottomed measuring cup.
01

Prepare the Crust

Prepare the Crust: Preheat oven to 350°F. Set a 9-inch pie dish at least 1½ inches deep on a rimmed baking sheet. Mix graham cracker crumbs, sugar, and melted butter until evenly moistened and the mixture holds together when squeezed. Press firmly and evenly into the bottom and up the sides of the pie dish, using the bottom of a flat measuring cup to smooth the crust. Bake 8 minutes, until fragrant and lightly set. Cool 10 minutes.

A hand whisks egg yolks, sweetened condensed milk, lime juice, and lime zest in a large mixing bowl.
02

Mix the Filling

Make the Filling: In a large mixing bowl, whisk egg yolks for about 1 minute, until slightly thickened. Add sweetened condensed milk, fresh key lime juice, and lime zest. Whisk just until smooth and creamy, scraping the bottom and sides of the bowl as needed.

A key lime pie bakes in a ceramic pie dish until the edges are set and the center still wobbles slightly.
03

Bake Until Just Set

Bake the Pie: Pour filling into the warm crust. Bake at 350°F for 15–20 minutes, checking at 15 minutes, until the edges look set and the center 2–3 inches wobble gently as one unit when the dish is nudged. The filling should not slosh, puff, crack, or brown.

04

Cool and Chill Thoroughly

Cool and Chill: Transfer the pie to a wire cooling rack and cool at room temperature for 45 minutes. Refrigerate uncovered at least 4 hours or overnight. Once the pie is fully cold, cover until ready to finish.

Fresh whipped cream, lime slices, and finely grated lime zest are added to a chilled key lime pie.
05

Top with Whipped Cream

Make the Whipped Cream: Place cold heavy cream in a chilled mixing bowl and beat until soft peaks form. Add powdered sugar and vanilla, then continue beating until medium-stiff peaks hold their shape without looking grainy.
