Prepare the Garlic:
Peel fresh garlic cloves, trim the root ends, and dry them thoroughly.

Whole garlic cloves cook gently in ghee until golden, soft, and mellow. The fragrant fat is ready for savory cooking, while the tender cloves can be spread or mashed into a dish.
This is one recipe with two useful results. The ghee picks up the warm, rounded flavor of slowly cooked garlic, while the cloves become soft enough to spread with the back of a spoon. Making the ghee first matters. Once the water and milk solids are already gone, the garlic can cook gently in clean butterfat without competing with the clarification process. Strain the two products apart when they are finished, store them separately, and use both.

Warm finished ghee just until liquid.

Submerge the cloves in the ghee and cook slowly until completely tender and lightly golden.

Remove the garlic cloves and strain the infused ghee until clear.
Transfer the garlic and ghee to separate clean containers.
Keep both products cold and use within the recommended storage period.
