Melt the butter gently and skim away the foam to uncover clear, pale-golden butterfat. Its clean flavor lets a hot pan do the work without any toasted, nutty notes.
Clarified butter should taste clean, delicate, and unmistakably buttery. Unlike ghee, the milk solids are not allowed to toast. The goal is to remove the foam, water, and pale solids while preserving clear butterfat without developing a roasted or nutty flavor. It is especially useful when you want the cooking performance of pure butterfat without changing the flavor of seafood, vegetables, eggs, or a finished sauce.
