Culture the Cream:
Stir live cultured buttermilk into heavy cream and let it ferment until thick and pleasantly tangy.

Cream cultures until gently tangy before it is churned, washed, and worked into a smooth, dense butter. A little sea salt sharpens its deep dairy flavor for spreading on warm bread.
This is butter in its most complete form. It is not whipped, and it is not a compound butter with other flavors mixed into it. The cream develops its flavor slowly before it is churned, and the finished butter is washed and worked until it becomes smooth, dense, and clean. Sea salt goes in at the very end, where it sharpens the cultured flavor without covering it up.

Stir live cultured buttermilk into heavy cream and let it ferment until thick and pleasantly tangy.

Cool the cultured cream to the proper temperature so the butterfat separates without becoming greasy.

Beat the cultured cream past the whipped stage until butter grains separate from the buttermilk.

Press the butter repeatedly in ice water until the washing water runs clear.

Knead fine sea salt evenly into the butter while pressing out the remaining moisture.

Press the butter into compact blocks or a covered butter crock and refrigerate until firm.
