Golden Parmesan breadcrumb-crusted halibut with a creamy coating, served with rice, green beans, and a lemon wedge.

Parmesan Crusted Halibut

Drying the halibut helps its creamy coating stay put under a layer of Parmesan crumbs. A wide, shallow pan lets the topping brown while the fish stays tender and flaky.

This Parmesan Crusted Halibut is crisp, creamy, and full of savory flavor, with a golden breadcrumb topping baked over tender, flaky fish. Quick enough for a weeknight meal but polished enough for guests, it’s the kind of simple seafood supper that pairs beautifully with vegetables, rice, or a squeeze of fresh lemon.

Granny’s Kitchen Notes

From Betty Lou Gardner

I dry the fish well or the coating slips off. I use a wide, shallow pan so the crumbs brown. This is a good recipe for company when there’s no time to fuss.
