Build the Cocktail
Fill a cocktail shaker halfway with ice. Add pineapple juice, orange juice, lemon juice, orgeat syrup, orange curaçao, rock candy syrup, and the light rum if using.

Orgeat gives a soft almond finish to this bright, pineapple-led coupe. Shake it very cold and serve straight up, or pour it over crushed ice on a hotter day.
This Pineapple Coupe is bright, citrusy, and lightly tropical with pineapple, orange, lemon, and a smooth hint of almond from the orgeat syrup. Orange curaçao rounds out the fruit, while optional light rum gives the drink a fuller, stronger finish. Serve it ice cold in a chilled coupe glass or over fresh crushed ice on warm evenings and hot summer days.

I usually keep this one a little lighter on the sweetness because the pineapple already softens everything nicely. Sometimes I serve it over crushed ice instead of straight up when the weather is especially hot.

Shake vigorously for 15–20 seconds, until the outside of the shaker feels very cold and becomes lightly frosted.
Strain into a chilled coupe glass, or strain over fresh crushed ice in a rocks glass.
Finish with one garnish, such as an orange peel, pineapple wedge, cocktail cherry, or dehydrated citrus wheel, and serve immediately.
