Soften the Butter:
Let the butter come to room temperature until spreadable.

Three forms of ginger make this whipped butter warm at first, then bright, with little sweet bits tucked through. A scoop slowly softens over sweet potato pancakes.
This is the ginger butter I’d want on sweet potato pancakes. It has three layers of ginger: ground ginger for warmth, fresh ginger juice for brightness, and crystallized ginger for little sweet bursts. The honey and vanilla round it out, while the salt keeps it from tasting flat. Whip it until it gets light and smooth, then let it chill just enough to scoop.

Grate fresh ginger and press out the juice.

Beat the butter until light and smooth.

Mix in honey, powdered sugar, ginger, vanilla, and salt.

Store in a ramekin, airtight container, or parchment log until ready to use.
