A good onion ring should crackle when you bite it, with the onion still at the center of the experience. Cold beer keeps this batter light as it fries into a craggy golden shell.
A good onion ring batter should be light enough that it shatters when you bite into it, not so thick that it takes over the onion. Cold beer is the secret here. The carbonation keeps the batter light while the baking powder and baking soda help create that crisp, craggy crust everybody looks for. I use this batter for a lot more than onion rings. Mushrooms, zucchini, cauliflower, pickles...if it can be fried, it's probably worth trying.

Whisk together the flour, seasonings, and leavening.

Slowly whisk in the cold beer until smooth.
Let the batter sit briefly before frying.

Dip the vegetables and fry until golden brown.
