Prepare the Mushrooms:
Cut the mushrooms into bite-sized cubes.

Roasting drives moisture out of the portobellos and concentrates their smoky marinade. They become a savory bite that holds its own beneath sauerkraut in a hot Reuben.
These mushrooms were never meant to imitate corned beef, and I think they're better because of it. The portobellos soak up every bit of the marinade, while the liquid smoke and tamari give them a rich, savory flavor that feels right at home on a Reuben. I usually end up making extra because they're just as good piled onto grain bowls or tucked into wraps as they are on a sandwich.

Cut the mushrooms into bite-sized cubes.

Whisk together the remaining ingredients.

Toss until evenly coated.

Bake until the mushrooms are browned and most of the liquid has evaporated.
Enjoy immediately or refrigerate for later.
