Build the Broth:
Simmer the aromatics and tamari together.

Hot, aromatic tamari broth seeps into the tempeh patties, giving them more depth before they ever hit a pan. Make them ahead, then sear the chilled patties when dinner needs to move quickly.
This recipe is really the foundation for several others in the collection. On its own, the tempeh is mild, but after soaking in this broth it picks up layers of savory flavor that make it incredibly versatile. I usually make a batch ahead of time because once the patties are finished, dinner comes together fast. Throw them on the grill, sear them in a skillet, or finish them with one of the sauces from this collection.

Simmer the aromatics and tamari together.

Let the frozen tempeh absorb the hot broth.
Transfer the tempeh to a sheet pan to cool.

Reserve the cooking liquid for future recipes.
Refrigerate until ready to use.
